It is defined as merchandise that is susceptible to deterioration as far as its physical, chemical and microbiological characteristics are concerned, as a result of the passing of time and environmental conditions. In most cases certain means of preservation are needed, such as temperature control, in order to maintain its original characteristics regarding taste, flavor, smell, color, among others, in such a manner that they are conserved under good conditions during their mobilization between the producer and the consumer. Among the types of perishable products there are: fruits, vegetables, fresh or frozen meats, fish and shellfish, dairy products, fresh flowers and plants, newspapers and magazines, among others. |
